This would really depend on what body type you have ie tudor coupe etc, or if you are building a fibreglass body or restoring an original steel, if you have a rolling chassis, or are using the original, how much of the car is complete or what condition it is in etc etc.

The 1928-1932 ford range are arguably the most popular pre '49 models ford released, and therefore parts are most easily available for them. It really depends on if you are going to to a complete vintage restoration (very hard to find original parts) or wish to create a street rod. There are some great books available on the subject, and you can find many dedicated to the restoration of the model A in the library or for around $50 from bookstores. If you do not wish to outlay any money i would probably go to some model A forums (i am in australia but there are many worldwide websites dedicated to this car) and ask a few people who have restored one themselves how they did it.
